What’s New, Cupcake Project

Last week while browsing the new books section of the library, I came across a fun new book about cupcakes. I really like baking.. mostly because it is something that I am halfway decent at. I have been considering taking a cake d

ecorating class… but I just do not have the time right now. I found the, “What’s New Cupcake” book and I fell in love with the idea of making cupcakes.

So, here we go. I am going to cook my way through the book.. designing cupcake after cupcake… and hopefully by the end I will have a great toolbox full of great ideas for future events!

Heath and I started our adventure this past week. We looked over all of our options and eventually settled on the “Bake Sale Cupcakes”.

Since I was due to work that night.. and I was short on ingredients, I decided to use an instant cake mix. I always substitute applesauce in for the oil and egg whites for whole eggs. One box makes 24 beautiful cupcakes. I am not sure why.. but I used a “whipped” icing which turned out to be a BIG mistake in the hot weather. It melted and all kind of ran together when it came to creating the “pie crust” look on the cupcakes. I was a little nervous about the color of the icing turning out okay.. but the instructions in the book were dead on! Overall, I think the cupcakes turned out great.. I think with a little practice.. and some air conditioning in my kitchen these could turn out really cute. I WILL be adding these to my keep pile!!
